Peanut Butter Cookies with Creamed Honey and Cinnamon

Indulge in these deliciously wholesome peanut butter cookies! Made with natural peanut butter, oat flour, creamed honey, cinnamon, and dairy-free chocolate chips, these cookies are a delightful treat for any occasion.

These cookies are a spin on one of the first recipes I posted. But, instead of making them with oats, this recipe uses oat flour creating a very soft cookie. These cookies also have chocolate chips for some extra sweetness and chocolate flavor — because who doesn’t love peanut butter and chocolate?

Cookie Ingredients:

  • 1 kg jar natural peanut butter
  • 1 1/4 cups oat flour (I use gluten-free)
  • 1/2 – 2/3 cup creamed honey (adjust to your liking)
  • 1 tbsp cinnamon
  • 1 bag (300g) chocolate chips (I use dairy-free)

Cookie Directions:

Put the peanut butter, honey, and cinnamon into a large mixing bowl. Mix until well combined.

Add the flour and mix again.

Finally, add the chocolate chips and mix well.

Line two cookie sheets with parchment paper. Using a medium-sized scooper or spoon, scoop the batter onto cookie sheets (makes about 32 cookies).

Use your hands to slightly flatten and shape the cookies.

Place the cookies in the oven.

Turn the oven to 350 degrees Fahrenheit (no need to preheat) and bake for 8-12 minutes, or until the edges are golden brown.

Note that when the cookies first come out of the oven, they will be very soft and will firm up as they cool.

Store in the fridge or freeze.
