Ingredients:
- 1 1/3 cups cashew butter
- 1/2 cup maple syrup
- 1/2 cup coconut sugar
- 2 cups oat flour
- 1/2 cup cocoa powder
- 3/4 cup water
- 1 cup dark chocolate chunks (1-100g bar of dark chocolate broken up into chunks)
Directions:
Put all of the ingredients, except the chocolate chunks, into a large mixing bowl. Mix until very well combined.
Open your dark chocolate bar and break it up into pieces. Add the chocolate chunks to your mixing bowl and stir until well combined.
Line a cookie sheet with parchment paper. Using a cookie scooper or spoon, make cookie balls with all of the batter. Next, flatten out the cookie balls slightly and shape them into a nice round cookie shape.
Put the cookie sheet into the oven, set the oven to 350 degrees Fahrenheit (no need to preheat), and bake for 8-12 minutes.
Cool on the counter and then transfer to the fridge. Store leftovers in the fridge.
Enjoy as is, heated up, or crumbled over vanilla ice cream … yum!
