Muffins. Who doesn’t love muffins? They are versatile, delicious, and perfect for breakfast, a snack, or a sweet treat any time of day. Today, I’m sharing a wholesome and flavorful muffin recipe that could very well become a new favorite in your kitchen. I hope you enjoy this walnut raisin muffin recipe!

Ingredients:

  • 2 cups oat flour
  • 1 cup oats
  • 1 cup unsweetened applesauce
  • 1 cup egg whites
  • 3/4 cup maple syrup
  • 1 tbsp cinnamon
  • 1/4 tsp allspice
  • 1 cup walnut pieces
  • 1 cup raisins

Directions:

Put all of the ingredients, except the walnuts and raisins, into a large mixing bowl.

Mix until well combined.

Add the walnuts and raisins and mix again.

Lightly grease a 12 cup muffin pan with coconut oil or cooking spray.

Scoop the batter into the muffin pan (makes about 12 muffins).

Place muffin pan into the oven and set the oven to 350 degrees Fahrenheit (no need to preheat oven).

Bake for 30-35 minutes or until tops are cracked, edges are lightly browned, and toothpick comes out almost clean.

Store in the fridge and enjoy!
