Get ready to satisfy your sweet tooth with these irresistible sunflower seed butter balls! Made with just a handful of wholesome ingredients, including dates, sunflower seed butter, oats, and a touch of cinnamon, these delightful treats are perfect for snacking or satisfying your dessert cravings. Each bite is packed with flavor and a hint of dark chocolate, making them a delicious indulgence.

Ingredients:
- 20 Deglet Noor dates + water (about 1 cup of dates, not squished down)
- 1 jar (454g) sunflower seed butter (about 1.5 cups)
- 1 tbsp cinnamon
- 1/4 cup coconut sugar
- 2 cups oats
- 12-16 squares of dark chocolate (about 1/2 cup melted)
Directions:
Start by putting the dates into a measuring cup. Then add hot water to just cover them. If you put them in a large measuring cup, fill the dates to the 1 cup line, and then add water to the 1 cup line as well. Set the dates aside.
In a large measuring bowl, add the sunflower seed butter, cinnamon, and coconut sugar. Stir until well combined.
Transfer your dates to the bowl of a small blender or food processor and blend until a smooth purée forms. Add the dates to your mixing bowl and mix again. Finally, add the oats and mix until very well combined.
Line a cookie sheet with wax paper. Using a small melon scoop or spoon, form small balls with the batter. This makes about 32-34 balls.
Next, add your dark chocolate squares to a microwave-safe cup. Microwave 30 seconds at a time, stirring every 30 seconds, until the chocolate is completely melted.
Drizzle the chocolate over the sunflower seed butter balls.
Transfer the sunflower seed butter balls to the fridge and let cool for 1-2 hours to allow them to firm up and for the chocolate to set.
Store in an airtight container in the fridge.
