Chocolate Peanut Butter Muffins

Start your day on a delicious note with these chocolate peanut butter muffins! Packed with wholesome ingredients like oat flour, almond flour, and cocoa powder, these muffins will satisfy your sweet cravings. With a moist and tender texture, rich chocolate flavor, and a hint of cinnamon, these muffins are perfect for breakfast, snacking, or dessert.

Ingredients:

  • 1.5 cups oat flour
  • 1 cup almond flour
  • 1/3 cup cocoa powder
  • 1 banana
  • 1/2 cup unsweetened applesauce
  • 2 cups egg whites
  • 2/3 cup natural peanut butter
  • 3/4 cup maple syrup
  • 1/2 tbsp cinnamon

Directions:

Put the peeled banana into a large mixing bowl. Using a potato masher or fork, mash the banana up. Add the remaining ingredients to the bowl and stir until well combined.

Lightly grease two muffin tins with cooking spray. Fill the muffin cups with batter using an ice cream scoop or large spoon, filling each to the top (makes about 18 muffins).

Set your oven to 350 degrees Fahrenheit (no need to preheat) and place the muffins in the oven. Bake for about 25 minutes, checking them around the 20-minute mark. The muffins are ready when they have risen, the tops are cracked, and a toothpick comes out clean or almost clean.

Let the muffins cool on the counter for about 10 minutes before enjoying them warm.

For storage, cool the muffins completely in the fridge and then transfer them to an airtight container (storing them in the fridge). These muffins also freeze well.
