Indulge in the decadence of brownies with a twist! This recipe takes the classic brownie to a whole new level by incorporating wholesome ingredients like chickpeas, peanut butter, pure cocoa powder, and gluten-free flours. The result? A delightful treat that’s slightly different yet equally delicious. These brownies are rich, fudgy, and packed with flavor, making them the perfect indulgence for any occasion.


Ingredients:
- 14oz can chickpeas (398mL)
- 10 pitted Medjool dates + hot water
- 1/2 cup cocoa powder
- 1/2 cup unsweetened applesauce
- 1/2 cup natural peanut butter
- 3/4 cup coconut sugar
- 1 cup oat flour
- 1 cup almond flour
- 1/4 cup maple syrup
- 1 tbsp cinnamon
- 1 1/4 cups water
Toppings:
- 1 cup chocolate chips
- Drizzle of natural peanut butter (if desired)
Directions:
Begin by putting your pitted Medjool dates into a large measuring cup. Press them down lightly. Add just enough hot water to just cover the dates (will be around the 1 cup mark). Let the dates sit for about 5-10 minutes.
Next, open your can of chickpeas and pour the contents into a strainer. Rinse well. Add the rinsed chickpeas to the bowl of your food processor (or high-powered blender).
Add the rest of the ingredients (excluding the toppings) into the bowl of your food processor (or high-power blender). Then add the date + water mixture.
Blend until very smooth. This could take several minutes depending on the power of your food process or blender.
Once the batter is very smooth, use coconut oil or cooking spray to lightly coat a 8×8-inch baking dish. Pour the batter into the dish spreading it out evenly with the back of a spoon.
Sprinkle 1 cup of chocolate chips on top.
Place into the oven, set the oven to 350 degrees Fahrenheit (no need to preheat), and bake for 35-45 minutes. Brownies are ready when the top is lightly cracked, edges are browned, and toothpick (poked into the middle) comes out clean (or almost clean if you like your brownies a bit gooey).
Once removed from the oven, drizzle a little bit of natural peanut butter on top. Using a knife, swirl the peanut butter + melted chocolate chips around to create a pattern. Keep spreading out the peanut butter and chocolate chips until the top of the brownies are completely coated.
Let cool on the counter for 15-20 minutes. Then, dive in and enjoy.
Store leftovers in the fridge.
