Another muffin recipe — yay! These muffins are incredibly quick and easy to make. Just throw all the ingredients into a bowl, mix, bake, and you’re done. It’s one-bowl baking at its finest! These muffins are bursting with flavor and are sure to become a favorite. Whip up a batch on the weekend and enjoy them all week long.
Ingredients:
- 2 bananas
- 1 cup almond butter
- 1/2 cup unsweetened applesauce
- 3/4 cup maple syrup
- 2 cups egg whites
- 2.5 cups oat flour
- 1 tbsp cinnamon
- 2 cups fresh blueberries
Directions:
Peel the bananas and put them into a large mixing bowl. Next, using a potato masher or fork, mash up the bananas well.
Add the remaining ingredients (except the blueberries) to the bowl and mix until well combined.
Use coconut oil or cooking spray to lightly grease 2 muffin tins (or alternatively, lightly grease ramekin dishes).
Use an ice cream scooper or spoon to scoop batter into the muffin tins or ramekins.
Place in the oven, set the oven to 350°F (no need to preheat), and bake for 20-25 minutes until the edges are lightly browned, the tops are cracked, and a toothpick comes out clean. Note that if you use ramekins, the muffins will be a bit bigger and will need to bake longer, likely around 30-35 minutes.
Let cool on the counter and transfer to the fridge.
Store leftovers in the fridge.
