Who doesn’t love pancakes? Today, I’m going to share with you my pancake recipe! These are perfect for a cozy breakfast or brunch. They are made with wholesome ingredients and are sure to satisfy your craving for a comforting and delicious treat.
Ingredients:
- 1.5 + 1/3 cups oat flour
- 3 eggs
- 5 tbsp maple syrup
- 1 tsp cinnamon
- 1 cup water
Toppings:
- Bananas
- Strawberries
- Blueberries
- Maple syrup
Directions:
Put all of the ingredients into a medium-sized mixing bowl and mix until well combined (not the toppings).
Next, turn the stove burner to medium heat. Put the pan on the stove and add a little bit of coconut oil. Let the coconut oil melt and then tilt the pan to coat it. Pour a bit of batter into the pan to create a nice round pancake. Flip once the edges start to brown and little bubbles start to appear. Once flipped, cook until the bottom is lightly browned. Put onto a plate and repeat until the batter is all used up (makes 9-10 pancakes).
Top with a bit of maple syrup and desired toppings such as sliced bananas, strawberries, blueberries, oats, granola, chopped nuts, etc.
Store leftovers in the fridge. Enjoy!
