Sunflower Oat Cookies

When it comes to spreads, sunflower seed butter isn’t usually a favorite. But did you know it makes delicious cookies? If you’ve been wanting to try sunflower seed butter, or have some kicking around the house, give this recipe a try!

Cookie Ingredients:

  • 1-500g jar sunflower seed butter (no sugar added)
  • 2/3 cup maple syrup
  • 2 cups quick oats (I use gluten-free)
  • 1 cup oat flour (I use gluten-free)
  • 1 cup chocolate chips (I use dairy-free)
  • 1 tbsp cinnamon

Directions:

Put all of the ingredients into a large mixing bowl. Stir until well combined.

Line two cookie sheets with parchment paper. Using a medium-sized cookie scoop (or a spoon), scoop the batter onto the cookie sheets (makes about 30 cookies). Flatten the cookie balls into nice round cookies.

Place the cookie sheets into the oven, set the oven to 350 degrees Fahrenheit, and cook for about 11 minutes, or until the bottoms of the cookies are lightly browned (that’s right, I did not preheat the oven!).

Store leftovers in the fridge.
