Happy Holidays! If you like ginger cookies, then give these a try. They are a great addition to any holiday baking. Plus they are quick and easy to make, which is always a bonus.
Ingredients:
- 3.5 cups oat flour (I use gluten-free)
- 1 cup almond flour
- 1/4 cup maple syrup
- 1 cup coconut sugar
- 2/3 cup almond butter
- 1 tbsp + 1 tsp cinnamon
- 1 tbsp ground ginger
- 1/2 tsp allspice
- 1 cup water
Directions:
Put all of the ingredients into a large mixing bowl and stir until very well combined. The dough will be very thick.
Line two cookie sheets with parchment paper. Using a medium-sized cookie dough scoop (or spoon), scoop the cookie dough onto the trays. The dough makes about 22-24 cookies. Once all of the dough is scooped out, flatten the balls out slightly and shape them into nice round cookies.
Place the cookie sheets into the oven and set the oven to 350 degrees Fahrenheit (note that I did not preheat the oven). Bake for 10-12 minutes or until the bottoms are lightly brown.
Store leftovers in the fridge.
