These cookies combine almond flour, teff flour, and oat flakes for a unique flavor. Their soft and chewy texture coupled with the subtle taste of spices, peanut butter, and maple syrup makes them truly scrumptious. Best of all, they are quick and easy to make.
Cookie Ingredients:
- 2 bananas
- 1/2 cup natural peanut butter
- 1 cup cashews
- 3 cups oat flakes (I use gluten-free)
- 1 cup almond flour
- 1/2 cup teff flour
- 1 cup maple syrup
- 1/2 cup water
- 1 tbsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp ginger
- 28 cashews for garnish
Cookie Directions:
Put all ingredients into your food processor with the exception of the cashews to be used as a garnish. Process until smooth.
Line two cookie sheets with parchment paper. Using a medium-sized cookie dough scoop or a spoon, scoop evenly sized balls of batter onto your cookie sheets (makes about 28 cookies). Use the back of a spoon to flatten the cookies slightly and top each cookie with a single cashew.
Bake in preheated 350 degree Fahrenheit oven for 12-15 minutes or until cookies are no longer gooey to the touch and easily lift off of the cookie sheet.
Let cool for 10 minutes. Store in the fridge.
