This recipe was born thanks to a request from my mom for an easy apple muffin recipe.
These muffins have a lovely apple flavor that is accented by a hint of cinnamon and nutmeg. They make for a great breakfast or snack and are perfect to grab and go when in a rush or to enjoy quietly with a warm mug of coffee or tea.
Muffin Ingredients:
- 5 red apples (I used Honey Crisp)
- 3 cups oat flour
- 1 cup cashews
- 1 cup unsweetened applesauce
- 1 cup egg whites
- 1 cup maple syrup
- 1 tbsp cinnamon
- 1/2 tsp nutmeg
Muffin Directions:
Begin by peeling and coring the apples. Next put all ingredients, including the apples, into your food processor and process until smooth.
Using coconut oil, lightly grease two muffin trays. Using an ice cream scoop or a spoon, scoop batter into muffin cups filling the cups almost to the top (makes about 21 muffins).
Bake in preheated 350 degree Fahrenheit oven for 20-25 minutes or until tops begin to crack and a toothpick comes out almost clean.
Let cool before serving.
Store leftovers in the fridge.
