Cashew Spice Squares

The desserts I create are usually motivated by whatever is in my pantry/fridge. I rarely start baking with a specific idea in mind, unless I get a request. And most of the time, these spontaneous creations end up being the most delicious.

This recipe is a prime of example of simply using what I had on hand to create something tasty. I hope you enjoy.

Square Ingredients:

  • 3 cups cashews
  • 1 cup egg whites
  • 1-14oz can butter beans
  • 1 cup maple syrup
  • 1/2 cup unsweetened applesauce
  • 2 cups almond flour
  • 1/4 cup tahini (sesame seed butter)
  • 1 tbsp cinnamon
  • 1/2 tsp nutmeg

Square Directions:

Begin by opening your can of butter beans and pouring them into a strainer. Rinse them very well. Transfer the rinsed butter beans to the bowl of your food processor. Add the remaining ingredients to the bowl of your food processor and process until very smooth.

Grease an 8-inch by 8-inch baking dish with coconut oil. Pour your batter into the dish smoothing it out evenly with the back of a spoon.

Bake in preheated 350 degree Fahrenheit oven for 35-40 minutes or until the top begins to crack and a toothpick inserted in the center comes out almost clean.

Remove from the oven and let cool on the counter for 10-15 minutes before transferring to the fridge. Let cool in the fridge for 1-2 hours before serving. Store leftovers in the fridge.
