If you’ve been following me for any amount of time, you’ve probably figured out that I love both chocolate and peanut butter and that I love them, even more, when they are paired together.
These chocolate bites make for a truly delightful treat. They pair very well with chai tea or coffee and so are perfect for serving with your afternoon tea or mid-morning coffee. They also make for a delicious dessert or treat to pack with you for a long work day!
Double Chocolate Peanut Butter Bite Ingredients:
- 1 cup natural peanut butter (at room temperature)
- 1/2 cup cocoa powder
- 20 fresh Medjool dates, pitted
- 1/4 cup water
- 1 cup mini chocolate chips (I use gluten-free, vegan)
Double Chocolate Peanut Butter Bite Directions:
Put all ingredients, with the exception of the chocolate chips, into your food processor and process until all of the ingredients are very well blended and a grainy mixture forms. The mixture won’t be smooth, but when squeezed between two fingers will hold together nicely.
Add the chocolate chips and pulse a few times to incorporate into the mixture (you don’t want to pulverize the chocolate chips, the goal is simply to mix them into the batter).
Now here’s the messy part! First, line a cookie sheet with wax paper. Then, using your hands, form 1-2 inch balls of dough. The batter makes about 36 balls. If you prefer, you can also squish the balls down to create more of a flat cookie shape.
Once all of the batter is used up, place the cookie tray in the fridge and let the balls cool for 2-3 hours before serving. This allows them time to firm up.
If you don’t like getting your hands dirty, another option is to line an 8×8 inch baking dish with wax paper and to pour the dough over top. Then, using the back of a spoon, flatten the dough dispersing it evenly over the surface of the baking dish. Cool the dish in the fridge for 2-3 hours, remove the dish from fridge and lift the wax paper and dough out of the dish. Next, peel the wax paper off, and slice the dough into small squares on a cutting board.
Store the balls, or squares, in the fridge! These also freeze very nicely.
