Banana Bread

Banana bread is another classic recipe. There are so many variations of banana bread, but this is one of my absolute favorites. In this recipe, I sneak in some peanut butter and dark chocolate. In combination, the ingredients come together harmoniously to create a truly delightful treat.

Bread Ingredients:

  • 4 small to medium sized ripe bananas (speckled black is best)
  • 1/2 cup unsweetened applesauce
  • 2/3 cups maple syrup
  • 1 cup oat flour (I use gluten-free)
  • 2 cups oat flakes (I use gluten-free)
  • 1 tsp cinnamon
  • 2 eggs
  • 1/2 cup natural peanut butter
  • 1 bar of dark chocolate, broken up into small pieces (I use Lindt Madagascar)

Bread Directions:

Peel the bananas and put them into a large mixing bowl. Using a potato masher or a fork, mash the bananas until very well mashed.

Add the remaining ingredients to the mixing bowl and then stir until very well combined.

Grease an 8-inch by 4-inch loaf pan with coconut oil and pour the batter into the dish spreading it out evenly with the back of a spoon.

Bake in preheated 350 degree Fahrenheit oven for about 60 minutes. Check the bread after about 45 minutes and keep checking it every 5-10 minutes until the top is lightly cracked, the edges are golden brown, and a toothpick inserted into the center of the bread comes out almost clean. (Like all baked goods, the baking time of this bread varies from one oven to the next.)

Let cool for 10-15 minutes before removing the bread from the loaf pan.

Slice up and enjoy warm or cooled off in the fridge!

Store leftovers in the fridge.
