Oatmeal Raisin Cookies

Oatmeal raisin cookies have always been a favorite of mine. A lot of people are haters, favoring the oatmeal chocolate chip cookie instead. However, I disagree. To me, oatmeal raisin cookies feel “wholesome”. There’s something comforting about them. And so, I enjoy them regularly as a snack or dessert. If you’re like me and like oatmeal raisin, then give these cookies a try!

Cookie Ingredients:

  • 3 cups oats (I use gluten-free)
  • 1 cup oat flour (I use gluten-free)
  • 1/2 cup Thompson raisins
  • 1/2 cup golden raisins
  • 1 cup unsweetened applesauce
  • 2/3 cups maple syrup
  • 1/2 cup almond butter
  • 1 tsp cinnamon

Cookie Directions:

Put all ingredients into a large mixing bowl and mix until well combined.

Line two cookie sheets with parchment paper.

Using a medium-sized cookie dough scooper or spoon, scoop the batter onto lined cookie sheets (makes about 22 cookies). Using your clean fingers, shape and slightly flatten the cookies.

Bake in preheated 350 degree Fahrenheit oven for about 10 minutes or until cookies easily lift off the cookie sheet.

Store leftovers in the fridge.
