Chocolate Chip Squares

These chocolate chip squares resemble a blondie — the “blonde” version of the brownie. Earlier this week, I posted a brownie recipe, so I thought I should now post its friend, the blondie (which I’m calling a chocolate chip square).

These squares are truly tasty! The chocolate chips add a bit of crunch to the soft texture of the squares. And the applesauce and cinnamon come together with the rest of the ingredients to create a mouthwatering treat.

Square Ingredients:

  • 2 cups cashews
  • 1.5 cups unsweetened applesauce
  • 1-14 oz (398 mL) can butter beans
  • 15 Medjool dates, pitted
  • 1 cup maple syrup
  • 1 cup almond flour
  • 2 cups oat flour (I use gluten-free)
  • 1/2 tbsp cinnamon
  • 1/3 cups water
  • 1.5 cups dairy-free chocolate chips (I use Prana)

Square Directions:

Begin by putting the butter beans into a strainer and rinsing them very well. Then, transfer them to the bowl of your food processor. Add all remaining ingredients, with the exception of the chocolate chips, into the bowl of your food processor and process until smooth.

Once smooth, add the chocolate chips and pulse to combine.

Using coconut oil, grease an 8×8 inch baking dish. Pour the batter into the dish and spread it out evenly. Bake in preheated 350 degree Fahrenheit oven for 40-45 minutes or until the top is golden brown and a toothpick inserted into the center of the squares comes out almost clean.

Let cool on counter for 10-15 minutes before serving (if serving warm).

Store leftovers in the fridge.
