I really enjoy making squares of all kinds because they are generally quick and easy to make. There’s no scooping batter into even sizes or greasing and then cleaning muffin pans. Squares are a one baking dish commitment. That’s it.
These particular squares also have icing, which means you are getting two bowls dirty (one for the batter and one for the icing) – but the icing is totally worth it!
The squares are rich and creamy and the icing adds an extra sweetness that is truly delightful! I hope you enjoy.
Square Ingredients:
- 1-14 oz can chickpeas (398 mL)
- 1 cup maple syrup
- 1 cup unsweetened applesauce
- 2 cups oat flour (I use gluten-free)
- 3/4 cups pecan halves
- 1/2 cup almond butter
- 1/2 tbsp cinnamon
Icing Ingredients:
- 1/2 cup almond butter
- 3/4 cups cashew butter
- 3/4 cups maple syrup
- 1 tbsp cinnamon
Square Directions:
Put all ingredients into your food processor and process until smooth.
Using coconut oil, grease an 8×8 inch baking dish. Pour the batter into the dish and spread it out evenly with a spoon. Bake in preheated 350 degree Fahrenheit oven for about 40 minutes or until edges are golden brown and a toothpick inserted into the center of the squares comes out clean.
Remove from oven and let cool for 10-15 minutes before icing.
Icing Directions:
Put all ingredients into a mixing bowl and stir until well combined.
Assembly:
Pour icing over squares and spread evenly.
Place in the fridge and let cool for 3-4 hours before serving.
Store leftovers in the fridge.
