Growing up, I really liked pudding cups (but then again, what kid doesn’t?!?). I especially enjoyed the chocolate ones. I loved the creamy texture and sweet chocolate flavor.
As an adult, I still enjoy chocolate pudding from time to time, but I no longer buy pudding cups. Rather, I prefer pudding that’s made from wholesome, nutrient-dense ingredients like this one.
This pudding is rich, creamy, sweet, and chocolatey. It’s also quite dense so little portions suffice. If you like chocolate pudding, give this one a try!
Pudding Ingredients:
- 1-398 mL (14 oz) can butter beans
- 2 cups cashews
- 1/2 cup cocoa powder
- 1 cup creamed honey
- 2 cups almond flour
- 1 cup water
- 1/2 tbsp cinnamon
Pudding Ingredients:
Put all ingredients into your food processor and process until smooth.
Transfer pudding into ramekins or small cups (makes about 10 – 12 servings).
Note: This pudding is quite rich so small servings suffice.
Sprinkle the top of each pudding with crushed cashews if desired.
Place ramekins in the fridge and let cool for 2-3 hours before serving.
Keep leftovers in the fridge.
