Cashew Chocolate Sandwich Cookies

I really enjoy making (and eating) sandwich cookies. There’s something about them that I just like. Maybe it’s the way the cream in the middle makes the cookie somewhat gooey… It adds a layer of decadence to an otherwise regular cookie.

These sandwich cookies are sweet and creamy. The cookies themselves are soft and the filling is chocolatey in flavor and velvety in texture. These cookies make for a great snack, dessert, or holiday treat!  

Cookie Ingredients:

  • 2 cups cashews
  • 3 cups oat flour (I use gluten-free)
  • 1 cup maple syrup
  • 1/2 cup water
  • 1 tbsp cinnamon

Filling Ingredients:

  • 2 cups cashews
  • 2/3 cups maple syrup
  • 1/2 cup cocoa powder
  • 1/2 tbsp cinnamon
  • 1/4 cup water

Cookie Directions:

Put all ingredients into your food processor and process until smooth. 

Line two cookie trays with parchment paper. Using a small cookie dough scoop or spoon, scoop small balls of batter onto the cookie sheets (makes about 48 small cookies). 

Run your clean fingers under cold water and then flatten each cookie. If your fingers begin to stick to the dough, run them under water again. Continue until all cookies are flattened. 

Place cookie trays in a preheated 350 degree Fahrenheit oven and bake for 10-12 minutes or until sides are golden brown and cookies are easily lifted off of the cookie tray.

Remove from the oven and let cool on the counter for 10-20 minutes before transferring to the fridge. Let cool in the fridge for about an hour before assembly. 

Filling Directions:

Put all ingredients into you food processor and process until smooth. Transfer the contents of your food processor into a bowl. Let the bowl of filling cool in the fridge until the cookies are ready to fill (about an hour).

Assembly:

Remove the cookies and filling from the fridge. Using a butter knife or spoon, spread a generous amount of batter on the bottom of a cookie. Pick up a second cookie and place it over the filling creating a cookie sandwich. Repeat until all of your cookies are turned into cookie sandwiches (makes about 24 cookie sandwiches).

Note: If you find yourself with some extra filling, just add some oats to it, mix well, and roll into balls. Store in the fridge or freezer for when you are craving a delicious treat! 

Store cookies in the fridge.
