Sunflower Seed and Nut Cookies

These cookies combine a variety of nuts and sunflower seed butter to create a soft and chewy cookie. The addition of spices adds a flavor dimension that make these cookies irresistible. If you like nuts and spices, give these a try! 

Cookie Ingredients:

  • 1 cup mixed cashews, almonds, and pecans
  • 4 bananas
  • 1/2 cup sunflower seed butter
  • 2 cups oat flour (I use gluten-free)
  • 1 cup honey
  • 1 tbsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg

Cookie Directions:

Put all ingredients into your food processor and process until smooth.

Line two cookie sheets with parchment paper. Using a medium-sized cookie dough scoop or spoon, scoop batter onto the cookie sheets (makes about 32 cookies).

Place cookie sheets into preheated 350 degree Fahrenheit oven and bake for 15-20 minutes or until the edges are lightly brown, tops are no longer sticky to the touch, and cookies easily lift off of the parchment paper.

Let cool for 10-20 minutes.

Store leftovers in the fridge.
