Frozen Banana Soft Serve With A Peanut Butter Crumble

Ice cream is one of those delicious treats that is oh so hard to resist. But when lactose isn’t your friend, resisting becomes a little easier.

It seems that what many call banana “nice” cream has become quite popular over the last year or so. I’m not a fan of this name because it suggests that other types of ice cream aren’t nice — and that’s just not true. I’ve been making what I call banana soft serve for many years and today, I thought I’d share one of my favorite recipes with you.

This banana soft serve is cool and refreshing and has a delicious peanut butter flavor. The peanut butter crumble adds a bit of a crunch to the smooth texture of the soft serve while also adding to the peanut butter flavor. This recipe makes for an ideal summer treat… or anytime treat — because it doesn’t need to be warm to eat ice cream!

Peanut Butter Crumble Ingredients:

  • 1/2 cup natural peanut butter
  • 1/4 cup honey
  • 1 cup oats (I use gluten-free)
  • 1/2 tsp cinnamon

Frozen Banana Soft Serve Ingredients:

  • 4 bananas, peeled, broken into small pieces, frozen
  • 1/4 tsp cinnamon
  • 1 tbsp maple syrup
  • 2 tbsp natural peanut butter

Peanut Butter Crumble Directions:

Put all ingredients into a mixing bowl and mix well.

Line a cookie tray with parchment paper. Using a medium-sized melon scoop or a spoon, scoop batter onto cookie tray (makes about 10 cookies).

Bake in preheated 350 degree Fahrenheit oven for 8-10 minutes or until the sides begin to brown lightly.

Remove from the oven and let cool on the counter for 10-20 minutes before transferring to the fridge. Let cool in the fridge for 1-2 hours.

Frozen Banana Soft Serve Directions:

Peel 4 bananas and break them into 3-4 pieces each. Put them in a ziplock bag and place them in the freezer. Let them freeze for about 24 hours.

Once frozen remove them from the freezer and put them into the bowl of your food processor. Add the remaining ingredients. Process until a very smooth, soft serve forms. You will likely need to begin by pulsing the contents of the food processor to get things going. You may also need to scrape the sides of your food processor once or twice.

Once the mixture is nice and smooth, you’re ready for assembly!

Assembly:

Use an ice cream scoop to scoop your soft serve into 4-5 ice cream bowls.

Remove your cookies from the fridge and crumble 1-2 cookies over each bowl of soft serve.

Serve immediately!
