If you’re looking for a tasty snack, I’ve got just the thing! Try whipping up a batch of these cookies.
Their chocolate flavor is balanced nicely with cinnamon and nutmeg and the peanuts and cashew butter add a little nuttiness to the mix.
With the holidays just around the corner, these make for an ideal and delicious holiday treat.
Cookie Ingredients:
- 10 pitted Medjool dates
- 1/2 cup cashew butter
- 1 cup crushed peanuts
- 2 cups oat flour (I use gluten-free)
- 2/3 cup maple syrup
- 1/4 cup cocoa powder
- 1 cup water
- 1/2 tbsp cinnamon
- 1/2 tsp nutmeg
Cookie Directions:
Put all ingredients into your food processor and process until smooth.
Line two cookie trays with parchment paper. Using a medium-sized cookie dough scooper or spoon, scoop the batter onto the cookie sheets (makes about 26 cookies).
Place cookies in preheated 350 degree Fahrenheit oven and bake for about 15 minutes or until cookies lift off the cookie tray easily.
Store leftovers in the fridge.
