Ah, pudding! It’s creamy, tasty, and all around delicious.
This pudding is truly rich and decadent. You won’t need a lot to feel satisfied — or you’ll take a couple of bites and keep wanting more! Either way, this pudding is sure to make your taste buds dance!
Pudding Ingredients:
- 5 bananas
- 1/2 cup natural peanut butter
- 1/2 cup maple syrup
- 1/4 cup + 3 tbsp cocoa powder
- 2 tsp cinnamon
- 1/4 cup coconut sugar
- 1/4 tsp vanilla extract
- salt to taste (3-4 cranks)
- garnish with crushed peanuts
Pudding Directions:
Put all ingredients, with the exception of the salt and crushed peanuts, into your food processor and process until very smooth.
Add a crank or two of salt (or a pinch or two) and process to mix. Do a taste test to see if it’s salted to your liking. Add salt a pinch at a time until your taste buds are happy (I used three cranks of salt in total).
Pour pudding into ramekins or small mugs/glasses (makes about 6 half cup servings). Top each pudding with crushed peanuts if desired. Let cool in the fridge for 2-3 hours before serving.
Store leftovers in the fridge (you’ll want to gobble this up within 24 to 48 hours).
Enjoy!
