Pecan Cinnamon Cookies

Not only are these cookies quick and easy to make, but they are also packed full of flavor and have a soft texture that will leave you wanting seconds…or maybe even thirds.

Whip up a batch and savor these cookies before they disappear!

Cookie Ingredients:

  • 2 cup pecans
  • 1 cup oat flour
  • 2/3 cup maple syrup
  • 2 tsp cinnamon

Cookie Directions:

Put all ingredients into your food processor and process until smooth (the batter will be quite thick and gooey).

Line a cookie tray with parchment paper. Using a small cookie dough scooper or spoon, scoop small mounds of batter onto the cookie sheet. Make sure to leave ample space between the cookies as they will expand in the oven. The batter makes about 18 cookies.

Bake in preheated 350 degree Fahrenheit oven for 15 minutes or until the edges are golden brown and little holes start to form on the top of the cookies.

Remove from oven and let cool or 20 minutes.

Store in the fridge.
